Avocado Pudding

I think if someone told me I had to live off of one food for the rest of my life it would be avocados. They are so freaking good it is unreal! I have probably eaten 4 a week for the last three years. You know how you can add cheese to anything like even a piece of cardboard and it will taste good, that’s what avocados do for me. I add it to my eggs, salads, soups, sandwiches, you name it, I probably did it.

Many people avoid avocados because they are high in fat. They contain a different type of fat (not like McDonald’s cheese burger fat) they have healthy fats that your brain and body needs. The fat in them actually helps you absorb nutrients from other foods. They contain more potassium then bananas and are full of fiber! And lastly, antioxidants are all the craze right now and they are filled with them! So point being eat them, they are good for you!

Ok get ready to judge me big time, I was watching Keeping Up With The Kardashians (I love it- I don’t even care) and Kourtney, who is super into healthy and whole foods eating, was eating avocado pudding for breakfast every morning and I had to recreate it!

When I got my Vitamix for Christmas it was the first thing I made (side note- love my Vitamix!). I goggled some things about it and pieced the recipes together, messed with it a bit and came up with my own. I really love it and would eat it all day if I could!

Ingredients:

  • 1 Ripe Avocado
  • 1/3 Cup of Almond Milk (or whatever milk, I use unsweetened vanilla)
  • 1 tbsp. of Chia Seeds (just for the added health benefits)
  • 1 tsbp. of Honey
  • 3 Ice Cubes

Directions:

  1. Dump together in blender and blend!

*You can use any type of blender/ Nutribullet
